Who doesn’t love an authentic Belgian artisan waffle freshly made?
The dough for our Liège waffles is prepared for Gofresquina® by a certified artisan in Belgium, following a traditional family recipe and using high-quality ingredients such as whole milk, fresh farm eggs, dairy butter, and pearl sugar from Tienen.
The dough portions, shaped by hand, are produced using the traditional method, without preservatives, colorings, or other additives, and with ingredients sourced from short supply chains.

From the fermentation of the dough to the slow baking in a cast-iron waffle maker manufactured in Belgium, at Gofresquina® we work according to the rules of the craft to ensure waffles of exceptional authenticity and quality.

We instinctively associate waffles with Belgium. What traveler hasn’t visited the country and enjoyed a delicious Liège or Brussels waffle as a snack?
According to tradition, the origins of the Liège waffle date back to the 18th century. Legend has it that the Prince-Bishop of the city of Liège asked his cook to create something sweet and flavorful. From this request was born a brioche dough enriched with pearl sugar inside—an immediate success. Thus, the Liège waffle was born, locally known as the “sugar waffle.”
Its dough is made from wheat flour, milk, eggs, yeast, and pearl sugar derived from white sugar beet grown in the Hesbaye region, an important agricultural area of the Province of Liège.
The dough balls, known as pâtons, are placed for a few minutes in a cast-iron waffle maker. The pearl sugar slowly melts while the dough bakes on both sides, resulting in a waffle that is crisp on the outside and soft on the inside, with its characteristic rectangular shape.
The Liège waffle is best enjoyed warm. The combination of its sweet flavor and unmistakable aroma evokes memories of childhood indulgence.
